One of the elements of Cantonese morning tea looks is a rice-based
dish that looks somewhat like Cheung Fun(肠粉 rice noodle roll),
but has no stuffing, but is instead steamed with a lotus leaf, translucent
and elastic. It smells like rice, but after you add just a drop of soy
sauce, you can see it is the perfect dish for absorbing other flavors. Chan
Tsun Fun (陈村粉 rice noodle from Chan village) is only available in the
PRD.

History

In 1927, in a little village called Chan in Shunde, Guangdong, a resident
created a kind of rice noodle with a thin, fresh, and smooth texture. As its
fame spread far and wide, outsiders began calling it Chan Tsun Fun, or-
Chan village rice noodle. Its complicated and delicate preparation process
meant Chan Tsun Fun couldn't be produced in large quantities, making it
an expensive item. The process of preparing Chan Tsun Fun involves more
than 10 steps, for example the rice (ingredient) had to be stored for at least
half a year so that the noodle is fresh. The way to wash the rice is also considered
a delicate process, as the rice needs to be washed for more than 10
minutes and soaked in water for a while. As small quantities were produced
in the past, some government officials in Beijing even had it flown to the
capital for VIP guests from abroad.

Characteristics and differences:

1. Rich smell of rice.
2. Thin. The thickness of the noodle is
0.5mm-0.7mm, which makes it translucent.
3. Elastic. This makes it fresh and smooth.

Chan Tsun Fun today

Today, following more than 80 years of development,
there are nearly 40 different ways to
eat Chan Tsun Fun: steamed, fried and rolled
are just three. It is said that the steamed way
is the best for Chan Tsun Fun. Many people
like eating steamed Chan Tsun Fun after
cutting it up and soaking it in sesame oil and
soy sauce poured over it. Former Chinese
leader Deng Xiaoping loved Chan Tsun Fun
because of its tender taste.

The simple way to cook Chan Tsun Fun at home:

1. Buy some raw Chan Tsun Fun from the local
market at about 3RMB per piece.
2. Steam it with lotus leaf. At the same time
ribs or beef can be put on the noodles and
steamed together.
3. Ten minutes later, add sesame oil, soy
sauce and shallot.
